The Flash meetup group I go to in Atlanta usually has a web design agency or creative agency sponsor their meetups and provide space, food, drinks, etc. Maybe you can find a company similar in Jersey close by that can sponsor your meetups. Especially with the economy the way it is. I'm sure there are plenty of places that would love to have this kind of traffic in their establishment.
